Salmon Patties

A tasty twist on a simple dish.

Ingredients

415g Canned Salmon
1½ Cups Mashed Potato
1 Tomato Diced
1 Onion Diced
½ Cup Cheese Grated
1 Egg Lightly Beaten
2 Tbs. Lemon Juice
2 Tbs. Butter
1 Cup Dried Breadcrumbs
1 Tsp. Curry Powder
2 Egg Whites
1 Cup Fresh Breadcrumbs (Cornflake Crumbs)
1 Tbs. Oil
SERVES: 4

Method

Combine salmon, mashed potato, tomato, onion, cheese, egg, lemon juice, butter, dried breadcrumbs and curry powder together in a large container with a lid.
Place into fridge, covered, for 1 hour.
Remove from fridge, and roll heaped tablespoonfuls of mixture into balls.
Coat each ball with egg white and roll in breadcrumbs (Cornflake crumbs).
Place the balls in a medium hot fry pan, and gently flatten slightly.
Shallow fry until breadcrumbs have become golden brown on each side. Remove, place on kitchen paper to drain.
Keep warm in the oven, whilst cooking remaining batches.
