Ingredients

| 415g Canned Salmon |
| 1½ Cups Mashed Potato |
| 1 Tomato Diced |
| 1 Onion Diced |
| ½ Cup Cheese Grated |
| 1 Egg Lightly Beaten |
| 2 Tbs. Lemon Juice |
| 2 Tbs. Butter |
| 1 Cup Dried Breadcrumbs |
| 1 Tsp. Curry Powder |
| 2 Egg Whites |
| 1 Cup Fresh Breadcrumbs (Cornflake Crumbs) |
| 1 Tbs. Oil |

| SERVES: 4 |

| Method
|
| Combine salmon, mashed potato, tomato, onion, cheese, egg, lemon juice, butter, dried breadcrumbs and curry powder together in a large container with a lid. |
|
| Place into fridge, covered, for 1 hour. |
|
| Remove from fridge, and roll heaped tablespoonfuls of mixture into balls. |
|
| Coat each ball with egg white and roll in breadcrumbs (Cornflake crumbs). |
|
| Place the balls in a medium hot fry pan, and gently flatten slightly. |
|
| Shallow fry until breadcrumbs have become golden brown on each side. Remove, place on kitchen paper to drain. |
|
| Keep warm in the oven, whilst cooking remaining batches. |
