One Pan Cheesy Pasta Goulash

We love the fact that EVERYTHING in this recipe cooks in one pan - the beef, the sauce, and the macaroni.

Ingredients

2 tbs olive oil
1 onion, chopped
2 garlic cloves, minced
400g beef mince
salt and pepper
1 tbs tomato paste
375ml beef stock
350ml passata
400g can diced tomatoes
1 tsp Italian seasoning (mixed herbs)
1 tsp paprika
1 ½ cup macaroni
1 cup grated cheese
Freshly chopped parsley to garnish
SERVES: 4

Method

Heat oil in a large frying pan, then saute the onion and garlic until tender - about 5 minutes.
Add mince and cook until brown, about 5-6 minutes. Season with salt and pepper.
Add tomato paste and stir to coat, then pour in stock, passata, and diced tomatoes. Season with Italian seasoning and paprika, and stir in macaroni. Bring to a simmer and then cover. Cook, stirring occasionally, until pasta is tender, about 20 minutes.
Remove from heat and stir through cheese.
Garnish with parsley before serving.
