Muesli

Muesli

I like a bit of crunch in my muesli but the crunchy shop varieties are a little too sugary for my taste.

Ingredients

6 cups (or one 750g packet) rolled oats
1 cup wheatgerm
1 cup coconut (flakes or shredded)
¾ cup raw or brown sugar
2 teaspoons vanilla essence
2 tablespoons honey
1 teaspoon cinnamon
¾ cup water
1⅓ cup fruit & nut mix
50g dried apricots
50g dates
30g dried cranberries
25g dried apples
50g sunflower seeds
37.5g pepitas
MAKES: 1.6kg

Method

Preheat oven to 150°C.
In a very large bowl combine the oats, wheatgerm and cinnamon.
Combine honey, brown sugar, vanilla and water in a jug and microwave on high for a minute or until the sugar is dissolved.
Tip the sugar liquid into the oat mixture and stir until thoroughly combined. Spread this mixture out onto two very large baking trays.
Bake for about 30 - 40 minutes until the mixture is turning a light golden brown. Every 10 minutes remove the mixture from the oven and stir so it bakes evenly. Allow to cool.
Mix in the remaining ingredients. Store in an air tight container.

50g dried apricots @ 9.00/kg = 0.45
25g dried apples @ 15.00/kg = 0.38
30g dried cranberries @13.5/kg = 0.41
37.5g pepitas @ 12.72/kg = 0.48
50g sunflower seeds @ 6.36 = 0.32
Total: 8.30 for 1.6kg = 5.20/kg
